NUTRITION PORTFOLIO


GOAL: A portfolio of work that shows the value of good nutrition is to be written after charting what one eats "normally" over 3 days and then comparing it to an additional 3 days in which one will eat "nutritionally", according to a thesis developed from research about good nutrition.

CHECK LIST: In order for the paper to be graded, you must have:

  • Works Cited/ Works Consulted at the end of the analysis section--The Portfolio WILL NOT BE GRADED WITHOUT THIS SECTION.
  • Rough Drafts of each word processed part
  • Must be word processed
  • Proofreader(s):

A. TITLE PAGE--10 POINTS
Be creative and original in your title. Use the computer and clip art. You must include the name of the paper, your name, your hour, and date.

B. TABLE OF CONTENTS--5 POINTS
List in outline form, the items and pages where each section can be found. The pages of the paper must be numbered according to this table.

C. REGULAR DIET DAYS
Record everything you eat and drink for 3 days. Use a different page to record each day. In the carbohydrate column, write the total grams of carbohydrates over the grams of simple sugars. At the bottom of the last recording of the day, total each nutrient and calculate the percentages by dividing by the number of calories consumed.

D. ANALYSIS OF REGULAR DIET--75 POINTS
Using books, articles, professional interviews and reputable on-line sources, take notes on what are considered the fundamentals of good nutrition. Reputable sources may include Newsbank on-line and SIRS on-line. All notes (index cards or highlighted copies of articles/internet) are to be placed at the back of your finalpaper. At least one of the articles must be current, which means within the last year. This article is to be placed IMMEDIATELY behind the references.(E)

You will need to do initial research at the same time as you record your diet for three regular days. During these days you are to eat as you "normally" would. AFTER you complete your research, compare your diet for the first three days to what your research says about good nutrition.

Your paper outline will be as follows:

Paragraph 1 --- Describe good nutrition based on your research
Paragraph 2---Describe your eating pattern for a typical day. When do you eat? What do you eat? How much do you eat? Do you excercise? Lastly, do you follow any principles of good nutrition that you stated in your first paragraph?
Paragraph 3 to 10---Write one paragraph on each nutrient across the top of the diet chart. (carbohydrates (including sugar), proteins, fat, cholesterol, salt, fiber, your vitamin, your mineral). This discussion should include: a description of the nutrient, how much is recommended in a daily diet, how you compared to the recommended standard, and what are the short and long term effects on your diet.

Paragraph11 to the conclusion---From this comparison, what, if anything should be adjusted in your diet in order to improve. Write a thesis (hypothesis) about how you should eat. "On the basis of my typical diet days, I need to _____________." The last statement in this paragraph will be your thesis and needs to be written as an "If, then" statement. For example, "If one eats less sugar, then one will have a more nutritious diet) You may need to do the PLAN page before doing this last paragraph.

E. WORKS CITED/WORKS CONSULTED PAGE----20 POINTS
References must be included after this section. All research and statistics, whether directly or indirectly quoted must have notations. Notations should be written like this--(author's last name page number). Make one section for those that you actually cited. Make a second list of those works that you used (consulted), but did not notate (cite). Both sections should have lists in alphabetical order. F. NOTES and RECENT ARTICLE-----20 POINTS
Insert your notes and a recent article. Highlight the parts of the article that you used in your paper. The correlation between the article, notes and your writing should be evident.

G. THE PLAN (your GOAL)--25 POINTS
Fill in the graphic organizer titled: "The Plan". Research the various "diets" and determine one that works best for you. It may be that you just have to add more nutritious foods and not make an entire diet change. Fill in the food pyramid with the foods that you have predominately been eating. Decide, based on your research, what your food pyramid should look like. Fill in the second pyramid with foods that should be in your plan. You MUST have a PLAN before beginning your "nutritional diet days". The plan will help you determine what needs to be added or deleted from your diet in order to accomplish your goal.

H. THE NUTRITIONAL DIET CHARTS--60 POINTS
Now eat according to your plan for three days. Fill in your charts and make your totals. NOTE: You will receive points in this section for how well you maintain your goal and how well you ate nutritiously. You receive no points for merely filling out the charts, but they will be necessary to do the rest of the paper.

I. JOURNAL--WATER, VITAMINS AND EXERCISE--30 POINTS
Obtain the data sheets dealing with water, vitamin and mineral supplements, and activity levels. Construct the graphs and draw conclusions. Do not use first person statements within the conclusions. Determine the number of calories that you use per day and compare to the number of calories that you actually eat. A web site called "Calories Per Hour" may help. The last page is a listing of your weight for all six days and a journal entry on your general health for those days. Did you feel any differently eating your "healthy" diet?

J. LINE GRAPHS--30 POINTS
Graph your calories, carbohydrates, sodium, protein, cholesterol, fat, fiber and the vitamin and mineral of your choice. Compare each to the norm. (The recommended allowances for fat must be determined by the number of calories YOU ATE each day. The fat grams that were calculated in class were based on an average calorie intake. HOW MUCH DID YOU ACTUALLY EAT?)

K. CIRCLE/PIE GRAPHS--30 POINTS
For each of the six days, determine the percentage of your calories eaten in complex carbohydrates, simple sugars, proteins, unsaturated fats and saturated fats. To do this, determine how many calories were consumed in each group and divide by the total calories consumed in one day. Make your graphs using a computer program. One will be set up in class.

TO CALCULATE UNSATURATED FATS--Subtract saturated fats from the total number of fats.
TO CALCULATE COMPLEX CARBOHYDRATES-- Subtract simple sugars from the total number of carbohydrates.

L. EVALUATION OF THE NUTRITIONAL DIET DAYS----40 POINTS
After completing your "nutritious" days, draw 5 conclusions on how well you did and on your general eating habits. After each conclusion, describe why you feel that your statement is true. Please, look at the example below that shows the difference between a result and conclusion. You need to write the conclusions only.

Result: Fats decreased over the nutritional days.
Conclusion: Meats contain large amounts of protein and fat. Decreasing meat, particularly red meat, will decrease fat and protein levles.

Then complete this section by making 5 additional conclusions (statements) about what you can say about nutrition in general. It should be a statment that could be a headline for the evening news. For example: Increasing proteins also increases saturated fats. Then explain what data led you to each conclusion.

M. THE FUTURE—-30 POINTS
Give a brief reaction to this paper. (TRY TO BE NICE!) In a separate paragraph give any effect it may have or will have on your "eating style". What have you learned and how will it affect your future? Conclude by restating your thesis. Did you prove or disprove what you stated? (This section would have a minimum of three paragraphs.) TURN IN ROUGH DRAFT.


ROUGH DRAFTS need to be turned in with your portfolio. Slide them into a plastic sleeve and insert it at the end of your paper. Your portfolio will not be returned. You will receive your scoring guide back. If you want a copy of the paper, you will need to make one BEFORE you turn in your paper.
